Day 34: Dessert Recipe

Breakfast: BP Coffee
Lunch: 6 egg omelette; veg shake
Dinner: Salmon; veg shake; sweet potato; 2 Paleo treats

I was looking for Paleo dessert recipes online a while ago. Dark chocolate, coconut, honey, nuts…I figured I could make something pretty tasty. However, I have no culinary skills whatsoever, so I was looking for something simple to throw together.

I found this recipe. I’m not a fan of peanut butter so the first time I tried it with almond butter. I also used honey, not maple syrup, and I threw some toasted flaked almonds and hazelnuts in too. In the end they just tasted bitter. Too much cocoa.

I tried again with less cocoa, but there was another problem. The honey is heavy and it doesn’t mix well with the coconut oil. When I pour the mixture into the cup cakes the honey comes out last. So it basically all goes into the last cupcake. The last cupcake is too sweet, and the others are a bit dull.

Basically, I went through several iterations. One was a melted butter and dark chocolate mix which my flat mate will tell, was completely rank. Eventually I got something decent together. I’m not sure where maple syrup fits on the Paleo spectrum, but it’s pretty dull without it, so it’s staying in. This recipe makes about 6. The featured image isn’t a photo of the desserts, but it’s pretty much what they look like.



Two tablespoons of coconut oil
40g 80%+ chocolate
Two tablespoons of maple syrup
Tablespoon of cocoa
Handful of toasted hazelnuts (whole or halved)
Two tablespoons of shredded coconut
Teaspoon of vanilla essence


Melt coconut oil, chocolate and maple syrup in a bowl
When melted, mix in cocoa, vanilla essence, hazelnuts and shredded coconut
Pour into cupcakes and put in the fridge.
