Lunch: Omelette; burger with pesto and tomatoes; fruit juice (apple, cucumber, spinach, ginger, coconut water)
Dinner: Chicken salad (onion, lettuce, tomato); veg shake (broccoli, sprouts, spinach, butter)
Exercise: Sprints in the morning; weights in the afternoon
I was off work today so I did some sprints in the morning then lifted weights in the afternoon.
I also tried out some new recipes. I found a great website for juices/smoothies so I tried one of their recipes. It’s similar to the juice I tried to make before, except it tastes nice. Anyway, the website looks great and I think I’ll be trying some more of their smoothies in future.
I know that I should eat lots of green vegetables, but tbh, I don’t like them. At all. I don’t understand how someone could actually like brussel sprouts, or cabbage, or broccoli. So I was on the look out for some way to eat more veg with less effort. And I found it. I steamed some vegetables and blended them together with….butter! The butter makes it taste a whole lot better, and the texture is more like a smoothy, or a mousse. More importantly, it helps to absorb the fat-soluble vitamins.
It’s a great way to get a ton of vegetables in. To give you an idea, this is how it looked on a plate and in the blender pre-blending:
Maybe calling vegetables in a blender with some butter a “recipe” is an exaggeration, but that’s what I’ll be eating from now on.
